Relevance Casein is the major protein component of mammalian milk. It constitutes a family of phosphoproteins: αS1, αS2, β, κ accounting about 80% of bovine milk proteins. Casein is frequently used as a blocking protein in immunochemical assays e.g. ELSA, Western Blotting.
